Physicochemical and Antioxidant Properties of White (Fiano cv) and Red (Negroamaro cv) Grape Pomace Skin Based Films

Abstract Grape pomace, as by-product of wine making, is a source polyphenols, fibers, fatty acids, metals, and organic which could be used raw component for the production sustainable materials. Novel biodegradable films based on pomaces, from Negroamaro (red) Fiano (white), Italian grape cultivars, were fabricated. Physical, chemical antioxidant properties material produced characterized. In particular, migration tests phenols pomace to aqueous food simulant medium investigated. Data obtained allowed evaluate activity in terms total phenol assay Trolox Equivalent Antioxidant Capacity profile. The characterization phenolic composition confirmed peculiarity some compounds such anthocyanins (191.17 ± 10.3 μg/g film) red skin film (NPF) great amount flavanols (76.36 1.72 white (FPF). polyphenols resulted active was test with simulants.
